Despite not using any oil or butter, this is a very moist cake. Elena uses carrots, almonds, flour, eggs and other ingredients. You could use icing, but I think the powdered sugar is the perfect topping. This is a super-easy cake to make and requires 10 minutes for prep work and 25 minutes to bake.
