My friend, Jean, sent me this recipe and I just knew I had to feature it. Charley created this dessert and shared the recipe on The Life of an Impatient Homesteader, her website. This is a really simple dessert. The only thing you bake from scratch is the shortcake and Charley’s recipe is easy to make.
The no-bake cheesecake filling is a wonderful blend of whipped cream cheese, whipping cream and other ingredients. To assemble, you just cut a shortcake in two, spread some filling on the bottom, top with cherry pie filling and put the top of the shortcake back on. You can use any flavor of pie filling and frankly I couldn’t stop thinking about how good a strawberry filling would be.
