I really like this recipe by Nagi because it’s easy to make, relatively fast, and is healthy.
One of her tricks is to make a marinade and use part of it to marinate the chicken and the remainder as a dressing for the zucchini. She also provides directions for either grilling the chicken or cooking it in a pan on the stove. Excellent directions and photographs!
