There are so many things I love about this cookie recipe. First, I LOVE shortbread cookies! This is a shortbread cookie with creamy peanut butter and chocolate chips. The cookies are thick the way a real cookie should be. Imagine one or two (or three) of these cookies with a big, ice cold glass of milk!
Another thing I like is that these are slice and bake cookies. You mix up enough for a nice dough log, wrap it and refrigerate. When you have that burning desire for an awesome cookie, you slice off a few, bake them for 12 minutes and you’re good to go.
